
The Kaname Kiritsuke 15cm is an extremely handy all-purpose knife and is suited to general food preparation of smaller food items.
A good all-around utility-sized knife perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. With its straighter edge, it is ideal for slicing cuts and push cuts.
At the core, the blades of the Kaname are made of an extremely hard VG Xeos steel with a hardness of 60-62 (±1) HRC, which is itself sheathed in two layers of stainless steel. This special manufacturing method creates a thin cutting edge of excellent and long-lasting sharpness that reduces food resistance during use and ensures smooth and precise cuts.
