
The Kaname Kiritsuke 12cm has a small blade well-suited for precise tasks such as trimming and peeling fruit and vegetables.
Perfect for slicing small foods such as garlic cloves or ginger. The length of this knife makes it easy to peel and trim even larger fruits and vegetables, such as extra-large potatoes or apples. With its straighter edge, it is ideal for slicing cuts and push cuts.
At the core, the blades of the Kaname are made of an extremely hard VG Xeos steel with a hardness of 60-62 (±1) HRC, which is itself sheathed in two layers of stainless steel. This special manufacturing method creates a thin cutting edge of excellent and long-lasting sharpness that reduces food resistance during use and ensures smooth and precise cuts.
